They\u2019re fun, they\u2019re kind of a novelty\/retro, they\u2019re seasonal thanks to the peppermint flavor and candy cane topping, they have an array of textures, and who doesn\u2019t love chocolate? I have previously called my chocolate-chocolate cookies with peppermint buttercream<\/a> \u201cpeppermint hot chocolate in a cookie\u201d but I take that all back. These<\/em> are peppermint hot chocolate in a cookie \u2014 I mean, they even have marshmallow! Yewande Komolafe\u2019s Hot Chocolate Marshmallow Sandwich Cookies from NYTCooking<\/a> and Erin Clarkson\u2019s Hot Chocolate Sandwich Cookies<\/a> really inspired me to develop this recipe!<\/a><\/p>\n\n\n\n

How to make marshmallow filling<\/h2>\n\n\n\n

Do not let the marshmallow filling intimidate you! If you have a candy or instant-read digital thermometer and a stand mixer, you can do it. I promise. Just keep a close eye on the temperature while the sugar, corn syrup and water melt together. If the temperature goes over 245\u00b0F, you\u2019ll have to start over, which wouldn\u2019t be the end of the world. Also, ensure an accurate read by placing the probe of the thermometer in<\/em> the syrup. But ensure it’s not touching the bottom of the pan (if using a digital thermometer).<\/p>\n\n\n\n
